
Stone Paddock 2008 Pinot Noir, Central Otago
Tasting Notes
Harvested from the Cromwell Basin, the grapes selected to make this Stone Paddock Pinot Noir were grown on the hard slate soils surrounding the old goldfields of Central Otago. The site features low vigour soils and good heat retention which allows for the development of full-flavoured and aromatic Pinot Noir grapes. Sweet cherry, plum and wild dried herb notes are evident on the nose, whilst the palate shows up–front flavours of raspberry, earthy tones and fine mineral complexity, balanced with influences of mountain herbs and spicy oak.
Foodmatch
Wild thyme and mushroom risotto is an ideal partner to this concentrated Pinot Noir. Equally complementary is New Zealand lamb, slow roasted with rosemary and served with a fruit sauce.
Viticulture
A selection of clones were sourced from two vineyards in the Lowburn sub-region of the Cromwell Basin. Each site represented a specific flavour component determined by soil and climate. The 2008 vintage was warm with cool nights which extended the ripening period and produced small berries with concentrated flavours.
Cellaring Potential
Great drinking from late 2009 with the potential to cellar for five or more years from vintage.
Winemaking Notes
Hand-harvested fruit was partially destemmed and crushed to open fermenters. The ‘must’ was cold soaked for eight days to extract fine tannins and deepen the colour of the wine. Fermentation was undertaken by naturally occurring yeasts. The ferment reached temperatures of 30-33°C and was kept healthy by twice daily punch downs. After pressing, the wine was transferred to barrel for malolactic conversion and barrel maturation. 33% new oak, 33% one year and 33% two year old seasoned oak was used to add layers of complexity and refine the balance of the wine. Bottling took place in February 2009 after a light egg white fining.
