Tasting Notes
The 2006 Stone Paddock Isabella Late Harvest Semillon is a wonderfully textured sweet wine with great elegance and appeal. Aromas of dried plums and apricots with orange peel and floral notes are dominant on the nose. The palate is soft and mouth-filling with flavours of mandarin, peaches and cream, with slight honeyed characters and hints of toasty vanilla oak.
Foodmatch
Isabella is a classic dessert-style wine. It has a lingering sweetness that is perfect paired with lemon meringue pie, coconut flan or vanilla-flavoured and fruit based desserts. With time, this wine will become more honeyed whilst keeping its smooth, mouth-filling finish.
Viticulture
Semillon grapes for Isabella are planted on the south side of the Paritua stream in the vineyard. A rigorous canopy management ensures that our Semillon gets to full ripeness before the noble rot of botrytis will affect the berries. Bunches with partially affected berries are hand-selected and are sent to the winery for processing late in the vintage season.

Winemaking Notes
Botrytis grapes are handled with extreme care. After a long settling time and light filtration, the juice is inoculated with yeast to start fermentation. Controlled temperatures are crucial to ensure a smooth ferment, and high sugar levels naturally stop the ferment. The wine is then filtered with great care before bottling.
