Concentrated cassis, black currant and cedar notes characterise the aroma of this classic cool climate Cabernet Sauvignon. A long, velvet palate of blackberry and black currants leads to a well-rounded finish of red fruits and chocolate notes, whilst ripe, silky tannins and toasty oak give balance and structure.
This full flavoured red matches perfectly with barbecued red meats, beef dishes, casseroles and strong flavoured cheeses such as cheddar and parmesan.
Cabernet Sauvignon grapes were sourced from both the Gimblett Gravels and the Ngatarawa Triangle in Hawkes Bay. The gravelly soils are responsible for the tannin structure of this wine, whilst the silty soils provide for depth of character. Low yielding vines intensify flavour while a program of leaf removal and opening of the canopy ensures good fruit exposure and clean bunches.
Some bottle aging will enhance the ripe fruit flavours and integrate the tannins. Best drinking from 2008-2013.
